25 Seeds: An Ancestral House in Pampanga is Now Chef Sau del Rosario’s Latest Restaurant

Primarily an agricultural industry, the Philippines relies heavily on its local produce and diligent farmers. Unfortunately, sharecroppers are often exploited and lack financial support. It’s the very reason Chef Sau Del Rosario primed up a farm-to-table restaurant in Pampanga that highlights the produce of local farmers. Meet 25 Seeds, Chef Sau’s passion project in his hometown in Pampanga.

25 Seeds celebrates and supports the produce of local farmers by serving dishes infused with ingredients that have been sourced locally and grown organically. “We go straight to the farmers… Sometimes, we fail to remember what these farmers go through every day just to grow those vegetables. When storms come in, I bet the farmers will even be willing to cover those crops with their bodies just so it won’t wither. But we never realize that,” shares Chef Sau.

The menu in 25 Seeds changes regularly depending on whatever produce is available and what is seasonal. The restaurant stands in the ancestral house of the Dycaico clan that had been abandoned for over 50 years. It was at the brink of demolition but luckily, Chef Sau and his team decided to have it repurposed and turn it into a farm-to-table restaurant.

“This is what I was really looking forward to because I’m an advocate or organic produce. I have always wanted a farm-to-table concept which I did not have before. So here goes my advocacy where I I could promote organic food and at the same time the different cuisines that we use,” he adds.

Chef Sau proudly labels himself as a lola’s boy, this has greatly affected his love for old and ancestral homes. While they restored the old home, Chef Sau and his team incorporated modern accessories and furniture for contrast.
